Avocado Pasta With Golden Shrimps

If you are looking for something light, creamy and full of flavour this avocado basil pasta hits the right spot. Paired with some golden oven-baked shrimps it’s a simple yet elegant dish that comes together in under 30 minutes.

The recipe

Preheat the oven to 215 C with ventilation.

Defrost the shrimps, pat them dry, then put them into a bowl.

Finely slice the garlic and put it in a small bowl or glass with 1 tablespoon of olive oil and a pinch of salt.

Let the oil infuse with the garlic flavour for about 15 minutes, then remove the garlic slices.

Pour the flavoured oil over the shrimps and toss to coat evenly.

Add a pinch of salt and toss again.

Arrange the shrimps in a baking tray on baking paper, sprinkle them with breadcrumbs and bake for about 15 minutes until golden.

Meanwhile, boil the pasta according to the package instructions. Drain and transfer it to a larger bowl, and reserve about 100 ml of the pasta water.

In a blender, combine the avocado, pine nuts, basil, parmesan, olive oil, the reserved pasta water.

Blend at medium-low speed about a minute until smooth and creamy.

Pour the avocado sauce over the pasta, add a squeeze of lemon juice and a pinch of salt. and gently toss until the pasta is evenly coated.

Transfer the pasta to serving plates, top with the golden shrimps, and finish with a drizzle of olive oil.

  • Dried pasta - 250 grams

  • Shrimps - 300 grams

  • Garlic - 3-4 cloves

  • Parmesan cheese - 25 grams

  • Avocado - 120 grams - one medium avocado

  • Good quality extra virgin olive oil - 15 ml

  • Pine nuts - 15 grams

  • Juice from one medium organic lemon

  • Fresh basil - 3 -4 leaves

  • A pinch of salt (or more to taste)
