Blueberry Mint Overnight Oats

The warm July days and fresh blueberries are responsible for this delicious breakfast. A touch of mint and squeeze of lemon will bring some extra freshness to your morning.

The recipe

In a blender combine the blueberries, juice from half a lemon, mint leaves, cashew, grated lemon zest, and rice-coconut drink.

Blend about a minute on medium speed until you get a nice smoothie.

Pour the smoothie in a bowl, add the oats and stir well to combine.

Transfer the mixture into a serving glass, cover and refrigerate overnight.

Before serving top with fresh blueberries and a spoon of peanut butter.

You can drizzle a teaspoon of honey over the top if you want an extra touch of sweetness.

INGREDIENTS - for one portion

Organic or “Best you can get” !

  • Raw cashews - 15 grams

  • Rolled oats - 50 grams

  • Peanut butter - 10 grams

  • Blueberries - 200 grams

  • Fresh mint leaves - 3-4 leaves

  • Lemon - juice and zest from 1/2

  • Rice drink with coconut - 150 ml

  • Honey - 1 teaspoon - optional
