Tuna Chickpeas Salad

Local tomatoes season is approaching - the perfect time for a fresh a salad. This one’s healthy, flavorful and high in protein, great for supporting your workouts. Chickpeas, tuna and avocado are tied together with a creamy tahini-orange dressing while the total prep time is just around 15 minutes.

The salad

Mix all the dressing ingredients in a small jar and shake well to combine.

In a large bowl, combine the tuna, avocado, chickpeas and the fresh lettuce. Tear the lettuce leaves by hand before adding them, for a more rustic look.

And the halved cherry tomatoes and the dressing. Mix gently to preserve the tomatoes intact.

Transfer the salad to the serving bowl !

Sprinkle over the pine nuts.

INGREDIENTS - for one portion

Organic or “Best you can get” !

  • Fresh Lettuce - 50 grams

  • Tuna in brine - 100 grams

  • Chickpeas - 100 grams

  • Cherry tomatoes - 150 grams

  • Pine nuts - 5 grams

  • Avocado - 50 grams

For the dressing

  • Good quality extra virgin olive oil - 10 ml

  • Fresh lemon juice - 10 ml or about “half a lemon squeeze”

  • Tahini - 1 tea spoon

  • Orange Juice - 10 ml  tea spoon

• A pinch of salt
