Avocado Tuna Spread

Probably this isn’t your regular guacamole, but maybe you should give it a try. Light, fresh, high in protein and loaded with healthy fats. Just bring your favorite baguette, sourdough bread, or wrap and dig in :). Some tasty, local, September tomatoes make a beautiful pair.

Avocado and olive oil bring monounsaturated fats, the kind that helps your body absorb the fat-soluble nutrients already sitting in this dish. Tuna adds an important dose of complete protein alongside selenium, while the lemon juice's vitamin C keeps things bright and fresh together with the picked cucumbers. It's a simple combination that's genuinely rich and satisfying without a single cooked element.

The recipe

Toast the pine nuts

Toast the pine nuts in a thick-bottomed pan for 3-5 minutes, until golden and fragrant.

Let cool.

Make the creamy base

Use a fork to mash the avocado by hand on a large plate. Add a pinch of salt, a grind of pepper, a drizzle of olive oil, and the lemon juice. Whisk and mix until you have a creamy texture - it shouldn’t take long. Transfer to a bowl.

Bring it together

Add the tuna, mustard, finely chopped pickled cucumbers, and the toasted pine nuts. Whisk slowly until everything is blended.

  • Dijon mustard - 1 teaspoon

  • A pinch of salt

  • Sourdough bread / Wholemeal bread / Wraps - 120 grams
