Tirokafteri - The Greek Feta Based Dip
Tirokafteri is a well-known Greek spread built around feta cheese and roasted peppers.
The name is a combination of two Greek words, “tiri” meaning cheese, and “kafteri”, meaning spicy.
How much chili you add is entirely up to you, but even without much heat, the combination of feta and roasted peppers is already delicious.
The recipe
Grill the peppers
Preheat a cast-iron grill or skillet.
Grill the red peppers on all sides until soft and lightly charred. Sprinkle with a pinch of salt, transfer to a covered bowl, and let them rest for about 5 minutes.
Peel the peppers once slightly cooled.
Prepare the spread
Add the feta cheese, olive oil, peeled peppers, chili, pine nuts, lemon juice and a grind of black pepper to a food processor.
Mix at low speed until smooth and creamy. Taste before adding extra salt, as feta is already quite salty.
Serve with grilled sourdough bread, warm flatbread, or roasted vegetables.
Baked eggplant halves also pair beautifully with this Greek spread.

Feta cheese - 250 grams
Red peppers - 300-350 grams
Red chili - 5 - 10 grams (to taste)
Pine nuts - 15 grams
Olive oil - 20 ml
Lemon juice - 5 ml
A grind of black pepper
A pinch of salt
