Mashed Plums Overnight Oats
Overnight oats are easy to prepare, tasty and healthy. Add some beautiful autumn gifts - sweet-juicy plums and crunchy walnuts - and you’ve got the breakfast ready.
The recipe
The mashed plums
This will be the topping for the overnight oats. To save time, prepare it one day in advance along with the overnight oats. Keep both in the refrigerator and assemble before breakfast.
Preheat the oven to 210C with ventilation.
Toss the plums in a bowl with honey, lemon juice and a pinch of cinnamon.
Spread on a baking tray lined with parchment paper and bake for 20 - 25 minutes. Let cool.
While the oven is still hot roast the walnuts for about 5 minutes. Let cool then crush them into crumbs using the flat side of a chef’s knife.
Mash the baked plums with a fork or spoon, transfer them in a small bowl, and refrigerate until use.
The overnight oats
In a bowl, mix the oats, coconut rice drink, yogurt, and a pinch of cinnamon.
Place in the refrigerator overnight (at least 4 hours).
The Assembly the dish
Divide the oats and the mashed plums into two portions.
Spoon a layer of oats into a serving bowl or large cup followed by a layer of mashed plums, then repeat one again.
Finish with a sprinkle of walnut crumbs over the top.

Fresh Plums - 200 g
Fresh Lemon juice - 10 ml
Coconut rice drink - 50 ml
Raw walnuts - about 25 grams
Greek Yogurt - 150 g
Oat flakes - 50 grams
Honey - 1 teaspoon
