Strawberries Sticky Rice With Peanut Butter
Inspired by the famous mango sticky rice, this version takes advantage of one of June’s greatest gifts: fresh strawberries. Brown rice adds a little more texture and fiber, while peanut butter brings richness and depth. Simple comforting and surprisingly satisfying.
Cook the rice
Add a pinch of salt to the rice drink and bring it to a gentle simmer.
Add the rice and cook according to the package instructions, plus about 3 extra minutes.
Remove from the heat and let it rest, covered, for 5 minutes.
Stir in the peanut butter, cinnamon, and lemon zest.
Serving
Mix well and divide between serving bowls.
Finely slice the strawberries and arrange them over the rice.
Drizzle with honey and serve.
You can serve it warm or chill in the refrigerator before serving.

Brown rice - 100 grams
Rice drink with coconut - 350 ml (you can also use oat milk)
Honey - 15 grams
Strawberries - 250 grams
Peanut butter - 30 grams
Cinnamon powder - 25 grams
Lemon zest - 5 grams
A pinch of salt
