Summer tomato salad with arugula dressing
Summer is tomato season, with beautiful colors, interesting shapes, and countless delicious flavors.
A mix of ripe tomatoes, sweet peppers, mozzarella, and a blended arugula dressing come together in a fresh and colorful summer salad. Grilling the peppers adds a gentle smoky note that balances the sweetness of ripe summer tomatoes.
The recipe
Grill the peppers
Preheat a cast-iron grill or skillet.
Grill the peppers for 3-5 minutes on each side, until tender and lightly charred.
Season with a pinch of salt and transfer them to a covered bowl for about 10 minutes.
This helps loosen the skins, making them easier to peel.
Prepare the dressing
In a blender, combine the arugula, lemon juice, lemon zest, olive oil, a pinch of salt, and a grind of pepper. Blend at medium speed until smooth.
Toast the pine nuts
Toast the pine nuts in a thick-bottomed pan for 3-5 minutes, until golden and fragrant.
Let cool.
Assemble the salad
Cut the tomatoes and peeled grilled peppers into bite-sized pieces and arrange them on the serving plates.
Add the mozzarella and sprinkle with grated Parmesan and the toasted pine nuts.
Spoon over the arugula dressing.
Serve immediately.
